Fried Egg With Chinese Leek

Fried egg with Chinese Leek is a very simple, homey Teochew omelette dish that you may not see in restaurants, but it’s so basic that anyone can easily cook the dish at home. Chinese leek is pungent when eaten raw, but it is freshly sweet when cooked. Simply sauté the thinly sliced leek and prawns before adding into the egg mixture. This way it’s a lot more fragrant. This simple omelette made with leeks can be served with rice for lunch or dinner in a multi course meal. Ready in just 10 minutes.

What is Chinese Leek Vegetable

Chinese leek (蒜苗) is a vegetable characterized by their flat green leaves, long stem and mild garlicky onion flavour.  It belongs to the allium family along with garlic, shallots, and all types of onions. Resembling green onions, Chinese Leeks have thicker leaves and a milder flavor (with occasional bitterness). The sharp flavor of raw leeks turns sweet and mellow when they’re cooked. They are both popularly used in Western and Asian cuisine. Chinese leek is also most popularly consumed during Chinese New Year as Chinese Leek is an auspicious symbol of wealth.

How To Clean And Cut The Chinese Leek

As leeks grow in sandy soil,  they tend to get really dirty and grainy on the inside so we need to give it a good cleaning before we use them.  As this recipe requires only sliced leeks, firstly we need to cut off the top dark green part of the leaves. These are too tough and fibrous to eat but they do have great flavour so you can just keep in the freezer for vegetable stock. Then cut off the base (root) part of the leek, slice the leek into two parts lengthwise and slice as thinly as you want. Next, scoop up the sliced leek and put them into a bowl of cold water. Using your hands, shove them around a bit. Let all the dirt and grit fall to the bottom of the bowl and the cut leek will hang up on the top of the bowl. Then scoop them up into a coriander with a sieve or your hands. Do not pour the leek out from the bowl, otherwise you will be pouring the dirt and sand back onto the leek.

How To Choose And Store Fresh Chinese Leek

Good leeks should feel firm and look healthy from root to tip. Choose leeks that are firm and straight with dark green leaves and long white stem. The stems should be white—we eat the tender white parts, so the longer the better—with no dark or soft spots. The dark green parts should be very dark with no yellowing or brown spots. Avoid anything that’s limp, wilted, or starting to shrivel. Smaller leeks tend to be sweeter and more tender.

Fresh leeks can be stored unwashed and untrimmed in the refrigerator, where they will keep fresh for one to two weeks. Wrap the leaves loosely to help retain their moisture. Do not trim or wash before storing. Once cooked, leeks can be kept in the refrigerator and used within two days.

Important Tips When Cooking Fried Egg With Chinese Leek

  • When cleaning the leek, put the sliced leeks in a large pot of water. Use your hands to shove them to allow dirt to fall to bottom of pot. Let sit for about 5 minutes. Use your hands to remove the leeks onto a coriander. Repeat this for two more times or until the water is no longer sandy. Do not pour the leek out from the pot. Otherwise you will be pouring the dirt and sand back onto the leek.
  • Use room temperature eggs to facilitate the cooking. To have room temperature eggs fast, place eggs in lukewarm tap water for 5 minutes.
  • Slice the Chinese Leek thinly.

Ingredients
 

Ingredients:

  • 2 stalks Chinese Leek , finely cut
  • 50 grams shelled prawn, chopped
  • 2 eggs

Seasoning:

  • ½ tsp salt

    Instructions
     

    Prepare Ingredients:

    • Prepare ingredients to cook the dish.
      Have ready all ingredients needed to cook the dish.
    • Peel the shell off prawn and chop into small pieces.
    • Clean and cut Chinese Leek: First trim the root end of the Chinese leek. Then remove the dark green top at the other end. Slice the Chinese leek in half lengthwise. Then cut into small pieces. Next rinse in water with your hands. Lift the cleaned slices of Chinese leek fro the water with a sieve.
    • Crack two eggs in a bowl. Using a fork or a pair of chopsticks, whisk evenly and set aside. And we are ready to cook the dish.

    Cooking Fried Egg With Chinese Leek:

    • Pan fry prawn and Chinese leek.
      Heat up a little cooking oil in wok. Add in chopped prawns till pinkish. Then add in finely cut Chinese leek and salt. Sauté everything for about two minutes till soft and fragrant. Remove from wok.
    • Place the fried prawns and Chinese leek into the beaten egg mixture. Stir to mix well.
    • Fry egg with chinese leek.
      Preheat the wok again on medium heat for 1 to 2 minutes. Add in 2 tbsp of cooking oil. The oil should shimmer right away but it shouldn't smoke. Pour in the egg mixture onto the middle of the wok and swirl the wok to cover the surface evenly. It should immediately fry at the edges. Let it cook until the bottom is no longer runny, gently flip it over to the other side. Pan fry over medium heat till both sides turn golden brown.
    • Fried Egg With Chinese Leek
      Remove and place on plate. Serve immediately with rice as one of a course meal. So Enjoy!
