A classic Teochew home cooked dish, Fried Egg with Chinese Leek, this egg omelette goes perfectly with steamed rice or congee. A simple but delicious way to cook chinese leeks. Try this and who knows, this could be your favourite omelette recipe.
Have ready all ingredients needed to cook the dish.
Peel the shell off prawn and chop into small pieces.
Clean and cut Chinese Leek: First trim the root end of the Chinese leek. Then remove the dark green top at the other end. Slice the Chinese leek in half lengthwise. Then cut into small pieces. Next rinse in water with your hands. Lift the cleaned slices of Chinese leek fro the water with a sieve.
Crack two eggs in a bowl. Using a fork or a pair of chopsticks, whisk evenly and set aside. And we are ready to cook the dish.
Cooking Fried Egg With Chinese Leek:
Heat up a little cooking oil in wok. Add in chopped prawns till pinkish. Then add in finely cut Chinese leek and salt. Sauté everything for about two minutes till soft and fragrant. Remove from wok.
Place the fried prawns and Chinese leek into the beaten egg mixture. Stir to mix well.
Preheat the wok again on medium heat for 1 to 2 minutes. Add in 2 tbsp of cooking oil. The oil should shimmer right away but it shouldn't smoke. Pour in the egg mixture onto the middle of the wok and swirl the wok to cover the surface evenly. It should immediately fry at the edges. Let it cook until the bottom is no longer runny, gently flip it over to the other side. Pan fry over medium heat till both sides turn golden brown.
Remove and place on plate. Serve immediately with rice as one of a course meal. So Enjoy!
When cleaning the leek, put the sliced leeks in a large pot of water. Use your hands to shove them to allow dirt to fall to bottom of pot. Let sit for about 5 minutes. Use your hands to remove the leeks onto a coriander. Repeat this for two more times or until the water is no longer sandy. Do not pour the leek out from the pot. Otherwise you will be pouring the dirt and sand back onto the leek.
Use room temperature eggs to facilitate the cooking. To have room temperature eggs fast, place eggs in lukewarm tap water for 5 minutes.
