All it takes is a few eggs, some vegetables and Asian seasoning to create this simple yet elegant dish. It is an authentic Chinese dish cooked like an omelette.

Ingredients
 

  • 3 Large eggs
  • 1 Red or yellow onion, slice thinly
  • 1 piece Chinese sausage, slice thinly
  • Salt and pepper, to taste

    Instructions
     

    • Lightly beat the eggs.
    • Thinly slice the sausage and onion for more even cooking.
    • Stir fry the sausage and onion before adding into the egg mixture. This is to enhance the flavour from them.
    • Then, put the stir fried into the egg mixture. Mix together. Season with salt and pepper.
    • Heat oil in a medium skillet or wok. Add in the egg mixture. Make sure the wok is hot enough so that the egg mixture is cooked properly.
    • Form egg mixture into one large pancake. Serve warm.

Notes

There are no hard and fast rules on what ingredients to go into the egg fu yong: Chinese sausage, barbecued pork, shrimp or even leftover minced chicken and pork are all popular.
For vegetable, onion and green onion are more often used.
Do not add the ingredients to the egg mixture in the wok. Instead mixed them together with the egg mixture before frying.
        
Deep-frying makes this restaurant style version of egg fu yong light as a soufflé.
        
 
 
One of my favourite Chinese dishes. …….. Great for a brunch, lunch or even supper!

Stir frying the ingredients will enhance the overall flavour, especially the chinese sausage and the onions. If you don’t want, you can just mix everything together to make the omelette as well. Thanks
